Tangy Chicken Salad with Grapes


Sweet red grapes and crunchy celery make this chicken serving of mixed greens sing, and furthermore balance out the slight tang from the yogurt and lemon. In any case, feel free to tweak the blend ins in with anything that you want (maybe some cleaved nuts or dried natural product) since this chicken serving of mixed greens recipe is effectively versatile. We use rotisserie chicken (search for unseasoned to hold sodium under wraps!) to improve on things, yet any extra cooked chicken will work.

Ingredients

  • ½ cup canola mayonnaise
  • ½ cup plain whole-milk Greek yogurt
  • 1 tablespoon fresh lemon juice (from 1 lemon)
  • 2 teaspoons Dijon mustard
  • ½ teaspoon black pepper
  • 5 cups chopped rotisserie chicken breast
  • ½ cup diced celery
  • 1 cup halved red seedless grapes
  • ¼ cup sliced scallions, divided
  • 1 head butter lettuce

Directions

Mix together mayonnaise, yogurt, lemon juice, Dijon and pepper in an enormous bowl until joined. Add chicken, celery, grapes and 3 tablespoons scallions, and throw to join. Serve on margarine lettuce leaves, and top with the excess scallions.
